1. Combine cornmeal, flour and Old Bay Seasoning. Take fish through a standard breading procedure; first dipping fish in the egg wash and finishing with the flour/cornmeal mixture. Fry fish in a 375℉ oil until an internal temperature of 140℉ is reached.
2. Mix mayonnaise with lemon zest, garlic salt and lemon juice. Refrigerate for 30 minutes to allow flavours to blend.
3. To assemble sandwich, spread 1 tbsp of lemon mayonnaise on each side of a ciabatta roll. Place the crusted tilapia on the heel of the roll and top with 2 slices of tomato, 1 slice of lettuce and top with the crown of the roll.
